Useful for more than toasting bread, toasters can be used to make simple, innovative breakfasts. Baked eggs take little more effort than scrambled eggs, yet add an elegant touch to the first meal of the day. They can be cooked in anything from a ramekin to a hollowed-out roll, potato or tomato, and can be baked with a variety of meats, vegetables and herbs.

Step 1

Combine 2 tbsp. spinach, 2 tbsp. diced tomatoes and 1 tbsp. feta cheese in the bottom of each ramekin.

Crack two eggs into each ramekin.

Step 3

Sprinkle the tops of the eggs with a bit of feta cheese.

Step 4

Season with freshly ground black pepper.

Step 5

Place the ramekins into a toaster oven set to 350 degrees Fahrenheit.

Step 6

Bake the eggs for about 10 minutes, or until the whites have set.
