To make this dish, thoroughly cook six pieces of chicken in a little vegetable oil in a pot and add water, rice, Spanish olives, fresh vegetables, cilantro, salt and pepper.

According to the Ohio State University Extension, there are 142 calories in a 3-oz. skinless chicken breast and 193 calories in a 3 ½-oz. chicken breast with the skin.
